Experiment with different varieties of apples and dried fruit to make this maple-sweetened treat, delicious for dessert or breakfast for about $1.65 per serving. Top servings with spoonfuls of yogurt or a drizzle of cream, if you like. Ingredients with an asterisk (*) are available as Whole Foods Market Brands.
Ingredients
2 (5-packs) sweet apples*, sliced
1/2 cup dried cranberries or raisins
2 tablespoons sugar
2 cups Muesli cereal or rolled oats
2/3 cup whole wheat pastry flour or brown rice flour
1/2 cup walnuts, chopped
2 tablespoons ground flax seeds
1 to 2 teaspoons ground cinnamon
6 tablespoons canola oil
4 tablespoons maple syrup*
Method
Preheat oven to 375°F. Spread apples and cranberries or raisins in a lightly oiled 9x13-inch baking dish. Sprinkle with sugar. Combine remaining ingredients and press over apple mixture. Cover tightly with a lightly oiled sheet of foil and bake until apples are just tender, about 45 minutes. Uncover and cook until golden brown, 20 to 30 minutes longer. Scoop into bowls and serve.
*For a wheat-free version, use 1 cup rolled oats in place of Muesli and use brown rice flour in place of whole wheat pastry flour.
